Join us for an in-depth exploration of venison, one of the most flavourful and sustainable game meats. This one-day workshop covers everything from butchering a whole deer to preparing exquisite dishes that showcase the unique qualities of this wild ingredient.

  • Butchery & Breakdown: Begin with an introduction to deer anatomy and learn the essential techniques to expertly break down a whole deer into its primal cuts. Gain hands-on experience in processing the meat for a variety of culinary uses.

  • Cut Preparation & Cooking Techniques: Discover how to make the most of each cut, from tender fillets and hearty haunches to flavourful shoulders and shanks. Learn methods such as roasting, braising, grilling, and more, tailored to each specific cut for maximum flavour.

  • Sausage Making & Preserving: Get practical experience crafting your own venison sausages and burgers.. An introduction to  curing, marinating, and other preservation methods to extend the use of your meat and reduce waste.

  • Flavour Pairing & Recipe Creation: Dive into the art of balancing flavours with venison, using herbs, spices, and accompaniments that complement its unique taste. You'll explore a variety of recipes, from classic dishes to modern takes on this wild game.

  • Sustainable Practices: Understand the importance of sourcing wild meat sustainably and learn field-to-fork principles that respect both the animal and the environment.

Arrive at Sheepdrove Organic Farm

Sheepdrove is an award-winning, family-run, mixed organic farm which is Soil Association certified. The farm is renowned for its exceptional conservation work and habitat creation for birds and other wildlife.

9.30: Make yourself comfortable with a cup of tea and bacon sandwich

10.00 – 11.00 Session One: Stalking vs farmed, Provenance, How to get your game, how to butcher into primary cuts

11.30 – 12.30 Session Two: How to prepare further joints, what can they be used for…

13.00 – 14.00 Lunch: BBQ some of the chops and loin 

14.30 – 15.30 Session Three: Intro to cure and seasoning, cooking and using the whole carcass  

16.00 – 17.00 Session Four: Practical session 

17.00 Departure

 

Duration: 1 day

Cost: £200 per person or £2000 for private course. All ingredients, equipment and recipes will be provided.
